Pork Vindaloo: The Refreshing Portuguese Delicacy

Pork Vindaloo is a recipe from Goa, that is slight sour but also spicy & hot. The curry recipe draws a lot influence from the Portuguese cuisine because of the use of vinegar & garlic in the recipe. This recipe is an essential part of the Portuguese cuisine. The main dish is spicy as it consists dried chillies, and its sour because of tomato and vinegar. Ingredients for Pork Vindaloo:

  • pork-500 gm
  • big onion-1
  • dry red chili-7
  • turmeric-1/2 inch
  • cumin seeds-1 teaspoon
  • black pepper-4
  • water as needed
  • vinegar-3 tablespoon
  • salt as needed
  • garlic-5 cloves
  • ginger-1/2 inch
  • cinnamon stick-1 inch
  • coriander leaves-1 sprig
How to prepare Pork Vindaloo:

Step 1) Initially, clean & cut the pork in chunks, then rub the pork pieces along with salt for drying the pieces off water. Put them beside.

Step 2) Then, make a paste for the pork curry. Blend together the vinegar, red chilies, ginger, cumin seeds, turmeric, garlic & chopped onion in a food processor. Utilize the paste to marinate the pork & allow it sit for about thirty mins.

Step 3) Next, put a kadai with moderate flame & put the marinated pork pieces into it. Now, drop the cloves, cinnamon & black pepper in the vessel & fry for around ten mins. (Tip: Oil is not needed to cook the dish, as pork fat is utilised for the same.)

Step 4) When the fat begins separating from the meat, pour some water in the vessel & combine finely. Put it covered with a lid & allow the pork curry to cook with low flame for like fifty mins, till the pork is tender. Decorate with a sprig of coriander leave.
